Please register for each class you would like to attend for the upcoming month. All classes are provided at no cost, with the understanding that you will provide all of the supplies and materials needed to fully participate. You will be provided with a secure Zoom link prior to each class, so please monitor the email account you use to register. Please log in 15 minutes before the start of each session so we can work out any technical difficulties. Please share your feedback on what activities you liked or would like to see so let us know!

Here are the details for our December schedule:

Wednesday, December 2, 2020 - 12:30pm-1:30pm: Zumba: Get up and join us for a fun hour of cardio and dancing! Be sure to wear comfortable clothing and shoes.

Friday, December 4, 2020 - 12:30pm-1:30pm: Karaoke: Showcase your singing skills with all your Mandy's Farm friends. Start thinking about a favorite song you would like to perform and be ready to put in your request to the DJ!

Monday, December 7, 2020 - 1:00pm-2:00pm: Animal Husbandry: Join the barn crew as we learn about horse feed, tack, and grooming.

Wednesday, December 9, 2020 - 12:30pm-1:30pm: Culinary Class: Join us as we make homemade hot cocoa and create holiday art together. Supplies needed: cocoa powder, sugar, milk, toppings (peppermint, chocolate chips, marshmallows, etc.), heavy cream, vanilla extract, and powdered sugar.

Friday, December 11, 2020 - 12:30pm-1:30pm: Arts & Crafts: Create cardboard reindeer ornaments for the holidays! Supplies needed: cardboard, ribbon, google eyes, buttons, brown pipe cleaners, glue (preferably hot glue), and markers.

Monday, December 14, 2020 - 1:00pm-2:00pm: Animal Husbandry: Learn about animals on the farm: alpacas, goats, and chickens.

Wednesday, December 16, 2020 - 12:30pm-1:30pm: Animal Husbandry: Did you know that there are different ways to ride a horse and different types of saddles? Today, we will be exploring the equestrian world.

Friday, December 18, 2020 - 12:30pm-1:30pm: Karaoke: Showcase your singing skills with all your Mandy's Farm friends. Sing your hearts out with Bernadette and Ivan!

Monday, December 21, 2020 - 1:00pm-2:00pm: Animal Husbandry: Learn about horse health and how to ensure they are healthy and happy.

Wednesday, December 23, 2020 - 1:00pm-2:00pm: Christmas Tree Icebreakers: Join us for an ice breaker session where we will share what we like about Christmas and draw our own Christmas trees. Supplies needed: a regular pencil, as well as colored pencils or crayons.

Monday, December 28, 2020 - 1:00pm-2:00pm: Garden Planning 101 & DIY Plant Markers with AgrAbility: April Cox, the AgrAbility Specialist, will teach you how to start your plan for your spring garden. Then join us as we make plant markers for the coming growing season. Supplies needed: acrylic paint (three colors), painting clothes, an aluminum pie tin or old pan (to paint in), 10 smooth stones or paint sticks, three paintbrushes (small, medium, and large), two water cups for painting, two pieces of white paper, and a pen or pencil.

Wednesday, December 30, 2020 - 12:30pm-1:30pm: Culinary Class: Learn to make your own butter chicken. Please review the following ingredients:

Marinade for chicken:

  • 28 oz (800g) boneless and skinless chicken thighs or breasts cut into bite-sized pieces
  • 1/2 cup plain yogurt
  • 1 1/2 tablespoons minced garlic
  • 1 tablespoon minced ginger (or finely grated)
  • 2 teaspoons garam masala (ground cumin, coriander, cardamom, black pepper, cinnamon, cloves, nutmeg)
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon red chili powder
  • 1 teaspoon of salt

Cooking ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons ghee (or 1 tbs butter + 1 tbs oil)
  • 1 large onion, sliced or chopped
  • 1 1/2 tablespoons garlic, minced
  • 1 tablespoon ginger, minced or finely grated
  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons garam masala
  • 1 teaspoon ground coriander
  • 14 oz (400 g) crushed tomatoes
  • 1 teaspoon red chili powder (adjust to your taste preference)
  • 1 1/4 teaspoons salt (or to taste)
  • 1 cup of heavy or thickened cream (or evaporated milk to save calories)
  • 2-3 tablespoons ketchup
  • 1/2 teaspoon kasoori methi (or dried fenugreek leaves)

Known as Murgh Makhani in India, this euphoric meal requires many ingredients that can be acquired in a specialty store (I recommend Bombay Spice, located on 6514 Central Ave SE, Albuquerque, NM 87108).

Prepare your ingredients for the marinade. Let the chicken marinade for 3 hours (overnight for better flavor). Lightly pan fry marinated chicken until chicken is done. After the chicken has cooked, set aside to cook the sauce.

Mince all fragrant ingredients (garlic, onion, ginger) and light fry on the pan. Add in cumin, salt, coriander, red chili powder and garam masala while frying the fragrant ingredients to activate the flavors for 1.5 - 2 minutes or until ingredients look well sweated. Add in crushed tomatoes/cooked chicken and simmer for 10 minutes. You can add extra spices if desired. Once the ingredients have gotten to know each other, add in heavy cream. This will give the dish and amazing orange color. Once that is done, add in ketchup and butter. Then add kasoori methi (fenugreek leaves). Simmer the dish until butter and cream is melted and well incorporated. Add in salt if desired. After simmering for another 10 minutes, serve with a side of rice and enjoy!
